Virtual Server confusion....

Hi,

I'm looking into using MS virtual server as a way to provide a backup of
critical servers.

This is what I'm thinking.

Crreate 2 virtual "hosts" on my LAN.

If I create VHD files of all critical production servers, I can store them
in a safe place and restore them to another virtual host if a server were to
go down.

From what I'm reading here, it seems that a VHD cannot be created from a
production server with MS Virtual Server, but can with a 3rd party like
Acronis?

Is this accurate?

I can't comprehend that virtual machines must be created from scratch with
MS virtual machine?

Is the whole point of virtualization not to take existing servers and
consolidate them on a single hardware set?

I don't understand.

Anybody?
