I done some research and called Dell but no one can seem to tell me for
sure if my Dell 1800 supports Hyper-V. Can someone point me to some
documention of supported intel processors and Hyper-V. Or if you happen
to know for sure that would be great.

The best way to find out what processor you have, and what its
specifications are, is to use the Intel Processor Identification Utility,
available from the Intel site:
http://support.intel.com/support/processors/tools/piu/

If the processor supports VT (Intel's version of Hardware Virtualization),
and you have it enabled in the BIOS, along with the No Execute bit (whatever
Intel calls it), then you should be OK.

Since it doesn't have Intel VT as a feature, it's not going to work
with Hyper-V. I don't think any 604 socket Xeon has HW virt.
You need a CPU with hardware virtualization and is 64bit.

These Xeon processors are 64bit and have HW virtualization:

and as such should work with Hyper-V w/o issue.
