I'm pretty sure I know the answer to this but I'm going to ask anyway...

can you create a 64bit virtual machine on real hardware that is only 32bit?
for example, to do some exchange 2007 testing/learning?

You can do x86 Exchange 2007 testing, there is one available for your needs
already created in VHD format.
